Summer BBQ Shish Kabobs

This is super easy and so delicious I just had to share.

1 package of chicken breast boneless skinless (about a 1.0lb)
cut up in nice chunks
1 red bell pepper
1 small container of cherry tomatoes
1 yellow squash sliced in 1/2 inch thick slices
1 small container of Portabella mushroom (babies)

Now the night before after I cut the chicken up I put in big zip-lock bag with salt and pepper and garlic about 1/4 teaspoon of each plus my favorite Walden Farms dressing like Balsamic Vinaigrette or Sun-dried Tomato Italian about 1/2 cup dumped over chicken and stored in the refrigerator until I am ready to assemble kabobs.

Then I pretty much do the same thing with all the veggies I notice the more I marinate the better the flavor so don't be shy with the seasonings and use what you like.

The next day while my grill is heating up medium heat I assemble the kabobs and make sure I have the chicken and all veggies evenly on the skewer. Then I simply grill for 25 mins.
Remove let cool for 5 mins and you have yourself amazing kabobs step one approved.
