Hi I would like to share one of my favorite recipes for a scallops!

2 tbsp olive oil – divided

1 cup low fat chicken broth

12 large sea scallops – patted dry

1 cup Walden Farms honey mustard salad dressing

2 tablespoons stone ground mustard

pinch of sea salt and pepper

In a nonstick pan, heat olive oil. Add sea scallops. Season tops with sea salt and sear well on both sides. Careful to turn only once {you don’t want scallops to tear} Remove scallops from pan and keep warm. Add chicken broth to hot pan and deglaze pan. Reduce temperature to medium – low and allow broth to reduce by half. Add dressing and mustard and allow to combine. Once they have combined, add sea salt and pepper to taste. Stir well to combine. Return scallops to pan. Turn to coat. Serve immediately spooning sauce over the scallops. YUMMY!!!
