Hi after watching Joey's YouTube Video about mason jar salads he inspired me to come up with a mason jar salad that included 2 cups of veggies. That way I can always bring one to work with me and be set for the week of ITG lunches. Hope you enjoy.

1 cup of Fresh Spinach
1/4 cup of chopped raw onion
1/4 cup of chopped cucumbers
1/4 cup of red bell peppers
1/4 cup of mushrooms or even cherry tomatoes.

I get the mason jar (you can purchase at Walmart) then I put my favorite walden farms dressing in the bottom 2 Tablespoons is the serving size.
Then I simply layer these veggies and put it in the frig until I am ready to eat.
For Lunch I take it out and shake it up real good so the dressing coats all the veggies and I love this salad with the ITG vegetable chili. YUMMY!
