Hi Toni, great question!

We recommend following the list of approved foods while on the ITG Diet. Coconut oil is high in saturated fat and low in unsaturated fat while olive oil is the opposite. You should use a couple tablespoons of olive oil to cook with each day as you should have those healthy oils in your diet. Coconut oil is adding a high amount of saturated fat which you will want to stay away from. Olive oil can be used, as well as flaxseed, canola, and sesame oil.

The good property of coconut oil is the fact that it has a high smoke point and will not convert to trans fat when used at high temperature. Olive oil runs the risk of turning to trans fat if heated too hot, burned or used more than once so stay cautious of that.

This page is also contained in all ITG Dieter Folders or you may print it for a quick reference when you visit the grocery store.
