Bring the eggs to room temperature by soaking in warm water for 2 minutes
Separate and add the yolk, garlic, mustard and lemon juice in a food processor, season with salt and pepper
Blend completely, and continue to run food processor while slowly mixing in olive oil
Once everything comes together, add the sour cream and chipotle, mixing well
Yields 1 cup. Serve as a garnish over meats or vegetables
