ITG Recipes for Steps 1-3

Feel free to enjoy the recipes here that can be used on the ITG Diet Plan.  One of our coaches has looked at, approved and most of the time has cooked the recipes we are sharing here.  We did not invent all of these recipes and will try to credit the author when provided.  Plan accordingly depending on the step of the plan you are on.  If you have a recipe you would like to share please send it to us!

Loaded Cauliflower Fritters

For All Stages of the ITG Diet Plan



For 4 people ()


  • 0.5 red bell pepper, finely chopped
  • 1.25 pound(s) cauliflower, finely grated (about 1 medium head)
  • 2 green onions, finely chopped
  • 1 clove garlic, minced
  • 1 jalapeno pepper, seeded and finely chopped
  • 2 tablespoon(s) ITG Plain Pancake mix
  • 2 whole eggs (or 4 egg whites)
  • juice of 1 lime
  • 1 teaspoon(s) fresh thyme
  • 0.75 tablespoon(s) sea salt
  • 0.25 teaspoon(s) fresh cracked black pepper
  • 0.5 teaspoon(s) cinnamon
  • 0.25 teaspoon(s) smoked paprika
  • Walden Farms Amazin Mayo

Loaded Cauliflower Fritters Directions

  1. Using a box grater or food processor, grate cauliflower as finely as possible. No need to precook or drain water out of the cauliflower!
  2. Transfer to large mixing bowl, add rest of ingredients and mix delicately with fingers until well combined.
  3. Form into 15 patties. Tip: Using ice cream scooper makes job much easier.
  4. Heat virgin olive oil in frying pan set over medium heat and cook fritters 6-8 at a time for 2-3 minutes on each side, until golden brown; keep warm while you cook remaining fritters.
  5. Serve warm, garnished with generous dollop of Walden Farms mayo and a few slices of jalapeno.
